Beth Johnson ’06, MFA, will be bringing over a decade of food and hospitality experience to latest trendy restaurant on St. Paul's Grand Avenue.

Hyacinth's menu will be seasonal but follow Mediterranean themes—expect antipasti, salami, and larger shared dishes. The space is small, with just thirty-eight seats, though Johnson says the restaurant will keep some tables for walk-ins. Johnson, who has extensive experience with coffee, wine, and whole-animal butchery, will serve as the general manager.

The restaurant is set to open in mid-August.
